I’ve been making this pizza so much this month. It’s hearty, refreshing and surprisingly different, which is just what you need to make pizza night more fun!
I’m gonna jump straight to the recipe because my words will just come in the way of how delicious this is.
(For the past two weeks I’ve been making pizza dough and putting it in the fridge, so I can have pizza, fresh bread or naan at the drop of a hat!)
Here’s what you’ll need for 1 pizza:
pizza dough (1/2 recipe for one pizza)
1 cup refried beans
3 Tblspn sour cream
2 cups shredded cheese of your choice (I use mexican blend, but a mix of cheddar and monkery jack is good too)
3 Tblspn ranch dressing
1-2 cups shredded iceberg lettuce
1 cup salsa
1 cup crushed tortilla chips
Preheat your oven to 400F
Roll out the pizza dough to about 1/4 inch thickness. Mix the sour cream into the refried beans and spread it over the dough. Top off with the cheese and bake for about 10-15 minutes, or until the cheese starts turning golden brown.
Then it’s just a matter of sprinkling over the lettuce, drizzling over the ranch, topping off with the crushed tortilla chips and serve with the salsa.
This is great for parties because you can bake it in advance, heat it up and add the toppings later, and also great for meal prep. You can have everything chopped and ready in containers and put it together in literally under 10 minutes. This is definitely a quick meal, but there is no compromise on taste. At all!
