Beef Burgers

BBQ season is upon us. I have a grill that has yet to be assembled, but I have a freezer full of beef burger patties ready to be defrosted and grilled to perfection, because sometimes I lack patience, and I couldn’t wait for the grill to come, so I just made bunch of burger patties to make myself feel better about it. But the recipe can be made the day of obviously, but with Ramadan around the corner, I feel safer with a freezer full of food.

Let’s get to the food now.

Here’s what you’ll need:

1 pound minced beef

1 medium onion

1 cup fresh coriander leaves

2-3 fresh green chillies

1 t coriander seeds, coarsely ground

1 t cumin seeds, coarsely ground

1 T crushed red pepper

1 T salt(add more according to taste)

1 egg

1/2 cup besan (gram flour) or bread crumbs

 

It’s not really a long process, just getting a few ingredients together. The fresher the better.

Add a chopped onion, the green chillies and the fresh coriander leaves to a food processor and blitz into a puree. I coarsely ground the cumin and coriander seeds fresh as well.

In a medium bowl add the minced beef, the puree, the seasoning. Mix everything together and then add the gram flour/bread crumbs and egg.

You can put the mix into the fridge before making patties so they don’t fall apart, or you can make patties and then refrigerate them. I made the patties and put them on a greased tray and froze them. Once they were frozen I transferred them into freezer bags, with a sheet of parchment paper in between so they don’t stick together.

This right here is the start of something amazing! You can add any ingredients you like, be it bbq sauce and mustard or a little soy sauce and scallions to amp up the flavour, but at the end you’ll alway get a deliciously moist, charred burger, right off the grill, or a grill pan in the comfort of your kitchen. I even bake them in the oven, drizzled with a little oil and they turn out great every time!
