‘everything but the kitchen sink’ pasta

This is one of those pasta salads that you can make when it’s a weeknight, you’re too lazy to go out and get groceries and all you have at hand are some odd bits in the fridge and pantry.

You can add whatever you want, as long as it tastes good together, of course, but here’s a list of things I added:

1 box penne pasta, cooked and drained

4 cups spinach, chopped

2 cucumbers, thinly sliced

1 tomato, thinly sliced

1 cup shredded carrots

1 cup shredded cheese (I used a blend of parmesan and asiago)

1/2 cup thousand island dressing

2 Tblspn bbq sauce

1/4 cup ranch dressing

2 Tblspn mustard

salt and pepper to taste


Just mix it all up and season to taste. If you have leftover chicken throw that in too! I’ve also made this with fresh colorful bell peppers, red onions and italian or greek dressing topped off with some feta cheese and it’s delicious.

This pasta can easily turn into a side dish or quick lunch or snack!
