It’s been a while hasn’t it?! I feel like I need to explain myself! I moved. Again. Yup. In the past 10 months I managed to move 3 times, but this time it’s a little more permanent. I have a fully functioning kitchen and recipes to be tested!
This is one of the first things I made, and it’s delicious! Who loves sour cream and onion potato chips? (I DO!!)
This is basically a bag of sour cream and onion chips and a baked potato mashed together to form the most delicious baked potato I have ever had in my life so far, and I don’t think i’ll find anything better soon.
Here’s what you’ll need for this baked wonder:
4 russet potatoes
1/2 cup sour cream
1/4 cup green onions, finely chopped
1/4 cup shredded cheddar cheese
salt and pepper to taste
1/2 tsp crushed red pepper
Wash the potatoes, scrubbing the skins clean, and bake them on a baking sheet, uncovered, in a 375 F oven for 45 minutes or until fork tender. take them out, let them cool down a bit, then cut them in half and scoop out most of the potatoes, just leaving a thin layer on the skins. In a small bowl add the scooped out potatoes and all the other ingredients and mash them together. Then divide the mixture between the potato skins. At this point you can add a mixture of bread crumbs and shredded cheese on top too, but they’re already so rich and delicious on their own that you don’t have to. Bake them covered for 15 minutes, then uncovered for another 15 minutes or until the tops are golden brown.
Serve these as a side dish to elevate any simple meal. What’s great about these is that it takes almost the same time and effort to make them in bulk as it does to make 3-4.
