Yes. We’re sticking to the ‘not so average’ theme here, and I think i’ll keep it for the month of july! So, i’ve already taken care of July 4th desserts in the past (Birthday Cake , 4th of July cupcakes) because it is my birthday after all, which is why I think it’s time to post an amazing potato salad recipe for all those die hard bbq-ers, just to add something a little special to a bowl of delicious fluffy potatoes. You wanna know the not so average part? Walnuts and baby kale! YES. Ive jumped on the Kale bandwagon. I still don’t like it in my drinks, but it makes a mighty fine salad.
So here’s what you’ll need.
10-12 large potatoes, boiled, peeled and diced
1 1/2 cups mayo
1 cup sour cream
1 1/2 T mustard paste
salt and pepper to taste
3-4 handfuls of baby kale
1 red bell pepper, finely chopped
1 cup chopped walnuts
I usually make this a day before, and add the kale and walnuts right before serving.
In a medium bowl mix the mayo, sour cream, mustard, salt and pepper and the chopped red peppers. Pour the mix over the potatoes, keeping about 1/2 a cup to add when serving (make sure the potatoes are cold so they don’t become mashed potatoes when you mix them!). Fold until everything is evenly distributed. Cover and refrigerate. When you’re ready to serve sprinkle over the baby kale, walnuts, and drizzle the remaining dressing on top. That’s it! Just a few extra ingredients make this classic potato salad into something special!
