Berrymisu: Summer Trifle

This recipe is so similar to Berrymisu, but it’s just so delicious that it needs a separate post. It’s perfect for upcoming spring/summer bbq’s (if spring ever decides to come).

Here’s what you’ll need:

1 yellow cake mix(I used betty crocker) OR 1 ready made pound cake

3 cups of mixed berries (I used strawberries and blueberries)

1 tub cool whip (or 2 cups lightly sweetened whipped cream)

I prefer the taste of the cake mix in this trifle, which is why I don’t go through the trouble of making it from scratch, but pound cake is my second favorite. You can choose your cake layer according to taste or convenience. So bake the cake and let it cool a little. If you’re using a pound cake just cut it into even slices and layer on the bottom of your dish. Then just top of with chopped strawberries and whole blueberries. I didn’t have raspberries at home or I usually put those as well. Then dollop over the cream and spread it into a sea of swirly goodness. Chill this for at least an hour before serving. You can even go for two layers in a trifle bowl (looks amazing in a trifle bowl!)

That’s it. Just that much work between you and a heavenly bowl of creamy, fresh, vanilla berry goodness.

Enjoy.
