Peachberry Crumble

Summer is here, even in Ilmenau, and the fruits are fresher and brighter than ever! As delicious as each fruit is on it’s own, mixing a few aren’t a bad idea. Berries are known to go great together, like in this delicious Berrymisu, but pair them up with juicy peaches and you’ve got yourself a winning combination. Add a crispy oatmeal crumble and its breakfast and dessert in one.

Here’s what you’ll need for a medium sized dish

2 peaches, diced

1 cup blueberries

4-5 Tblspn sugar + 1 Tblspn for the crumble

1/3 cup cold butter, chopped into small cubes + 1 T(also cut into small cubes)

3/4 cup oats

1/2 cup flour

Preheat your oven to 350 F.

In a bowl combine the flour, oats and 1 Tblspn sugar. Then toss the diced butter in the mix and using your fingers crumble the butter into the flour mixture until a crumb like mixture is formed. You might need to add more butter, but start with 1/3 cup. Then in an oven proof dish toss the fruit in the sugar. Sprinkle over the crumble and bake for about 30 minutes. After about 20 minutes of baking time, remove the dish from the oven and spread the remaining 1 Tblspn butter over the top and bakes until the crumble is golden brown and the blueberries start bubbling.

Serve with ice cream to make it a delicious dessert, or with yogurt for a refreshing breakfast 🙂
