Banana Bread

This is one of my favorite recipes. I’ve adapted it from one of my all time favorite cook books by Mrs. Fields herself=D  It’s great with a cup of coffee, or a scoop of vanilla ice cream.

You will need:

2 1/2 cups plain flour

1 1/2 teaspoon baking soda

1/2 tsp salt

3/4 cup butter, softened

1 cup soft brown sugar

1/2 cup sugar

2 eggs

1 1/2 cups mashed bananas

1 tsp vanilla extract

1/2 tsp ground cinnamon

small pinch of nutmeg

3/4 cup chopped walnuts

3/4 cup chocolate chips

Preheat your oven to 325 F or 180 C.
Grease 2 loaf pans (9 by 5).
Combine the flour, salt, cinnamon, nutmeg and baking powder.
In a separate bowl mix the butter and sugars. Add the eggs, mashed bananas and vanilla.
Gradually mix in the flour mixture. Add the walnuts and chocolate chips. You don’t have to add the chocolate chips. I love the combination of chocolate, bananas and walnut sin this cake so I recommend it!  Don’t over mix.
Split the batter into both pans and bake in the center rack for about an hour. They’ll be done when a toothpick inserted in the center comes out clean. The top of the cake will be dark brown, but that doesn’t mean it’s burned. Let it cool completely before cutting into slices.
